Sunday Cooking - Corn Chip Salad

This salad is quick easy and delicious. The best thing about this salad is it's usually a crowd favourite, it's cheap to make and it can feed a crowd or be made for just one person; it can be made the same day or days in advance. It's all about convenience with this one, Quick and Easy.

What you will need for this recipe is:

1 Red Onion

4 Peppers (multiple colours)

1 Bottle of Catalina Salad Dressing

1 Bag Corn Chips (Plain or BBQ)

Step one is to chop everything up. (How we chop onions and peppers: we slice off each end, and then slice down the middle of both the onion and the peppers. Peal the onion and take the insides and seeds out of the peppers. Make slices in each and then chop each slice into bite sized pieces.) If you are making the salad right away put the onion and peppers in a large bowl after chopping, if not put in an air tight container and refrigerate.

Once you are ready to make the salad add the chopped vegetables, the whole bag of corn chips and the whole bottle of salad dressing. Mix everything well and serve immediately.

Single Style: place onions in one container with a lid and all the chopped peppers in another. In a serving bowl place two handfuls of corn chips, two fingertip pinches full of peppers and a small pinch of onions and 2 tbsp of dressing.

NOTE: If the corn chips sit for too long they will get soggy. Combined everything at the last possible minute.
