Sunday Cooking - Lentil Salad

Lentil Salad is an amazing salad to have on hand, it is very healthy and delicious. Lentils are full of potassium, calcium, zinc, niacin and vitamin K, but are particularly rich in dietary fiber, lean protein, and iron. And we are making them taste great in this salad.

A bag of lentils makes a lot of salad so keep that in mind when using it. Either you will have a lot of salad on hand which is a good thing if you plan on eating it often or you will make way too much and it will go to waste!

What you'll need:

Onion (medium, chopped)

2 Carrots (chopped)

1 stock of Celery (grated or chopped)

1 clove of Garlic (grated)

Bacon

Lentils (plus water)

Other vegetables (we used brussel sprouts and mushrooms)

Salt and pepper to taste

Lemon Juice (optional)

In a large frying pan add the bacon and left cook completely. Remove bacon and drain of most grease. In the same frying pan add the chopped onions and carrots, grate in the celery and garlic. In a pot of boiling water, cook lentils according to package. (If you are using other vegetables that need to be boiled do so now: e. i. brussel sprouts, broccoli). Once the lentils are done, drain and add to the cooked vegetables (onions and carrot mixture). Add the other vegetables of your choice (we used mushrooms and brussel sprouts) leave on the heat until the raw vegetables have cooked completely. Stir and mix well and then add the bacon back in (either crumbled or chopped). Add salt and pepper to taste (we also add a squeeze of lemon juice and mix it together but that is optional).
