Sunday Cooking - Greek Salad
Greek Salad is a very popular salad and there's really no trick to making it. You can easily find many recipes for Greek Salad online. Today we are going to talk about the ingredients, the sauces and how to turn your left over Greek Salad into a Left Over Make Over!
What you'll need:
Lettuce (we used Romain)
Red Onion
Cherry or Plum Tomatoes (or any small tomatoes)
Black Olives (we used sliced in the can but whatever works)
Cucumber (English)
Feta Cheese
Salad Dressing
Getting Started:
Plain and simple salad, you want to wash and dry the lettuce as best you can. Then tear it up or chop it up and place it into a mixing bowl. You can peel the cucumber if you want or just give it a rinse and chop it up also. Same with the tomatoes, a quick rinse and a slice in half. The olives if you used canned you want to drain them of their juice and slice if you prefer or leave them whole (fresh olives work well also). The red onion you would treat as a regular onion, peel and slice (we like to do it thinly so its not too over powering but whatever you prefer is fine). And finally the feta cheese. Feta usually comes in brine, so you will want to drain it and pat it dry before adding it to your salad or it may make the other items soggy.
Salad Dressings:
In Greek they dress a salad with olive oil, lemon juice and oregano. If you're not quite Greek enough for that you have two options. One is a Greek Vinaigrette which would be the closes to the most authentic dressing or you have a creamy dressing (our favourite!). To make this into a Left Over Make Over we recommend the creamy dressing but the choice is yours.
Recipe Number two: Left Over Make Over Greek Wraps
This is a great and easy way to use up left over Greek Salad (or any salad) and make it into something a little different. Let's face it eating a salad all the time gets boring. So why not add a pita! Pitas are healthy also and they won't make you feel bad for eating your salad differently!
Simply take the salad you've already made, add it to the middle of a pita and roll it up! Super quick and easy, and it tastes great!
