Sunday Cooking - Mexican Stuffed Peppers
This recipe is great because it can be made with Left Overs or fresh. Stuffed Peppers are super simple to make and these specifically are packed full of flavour!
What you will need for this recipe is:
Taco Seasoning
Ground Beef
5 Minute White Rice
Tex Mex Cheese Blend
Two Peppers + One Pepper per person
Getting Started:
If you are making this dish fresh; you will want to start by cooking the meat and adding the taco seasoning in. If you are using left overs, this process will already be done.
Start the rice according to package (make servings according the number of people you are feeding).
Prepare the pepper. Slice the tops off the peppers (one per person), remove the seeds. Coat the peppers in oil and place standing in a glass dish and cook in the oven for around 20 minutes. Chop up two remaining peppers and fry in frying pan. Once the peppers are cooked to your liking, add in the cooked taco meat and the cooked rice. To finish the mixture add in cheese and let melt (about one cup).
Once the peppers in the oven have become fork tender, fill with the meat mixture. Top with cheese and bake on broil until the cheese has melted and become golden.
