Sunday Cooking - Breakfast Potato Casserole
This Breakfast Casserole will take your breakfast to the next level! It is simple to make, and since it is a casserole you just have to throw it all in one pan and forget about it. This recipe is also easy to personalize and make your own.
What you'll need:
Eggs
Milk (Optional but Recommended)
Yukon Gold Potatoes (Shredded)
Cheese (Anything you like)
Other Optional Items:
Cooked Meat (Bacon, Ham or Sausage would be great)
Green Onion (To top with would work fine)
Step one:
Using a regular cheese grater or box grater shred the potatoes. (The type of potato is very important. Russet potatoes will soak up all the liquid so you may need to boil them slightly first. Yukon Gold potatoes or anything waxy should work better.)
In a large mixing bowl, mix eggs, milk and cheese well. Add the potatoes and coat generously.
Pour mixture into a greased casserole dish or glass dish. Bake for 50 minutes at 350 degrees. Top with Cheese (and cooked meats at this time - optional). Make for another 10 minutes (or until cheese is melted and golden.
Top with green onions (optional). And Serve!
