Spinach Artichoke Grilled Cheese Sandwich

Today we are sharing a recipe for Spinach and Artichoke Grilled Cheese. This is inspired by the very popular "Spinach Artichoke Dip" recipe. There are a few different takes on this, it all depends on your personal preference.

What you'll need:

2 Cups or Handfuls of Spinach (we recommend fresh but frozen works also)

7-10 Artichoke Hearts (again from a jar or frozen is fine)

2 Clove of Garlic (or more depending on personal taste)

4 Slices of Bread (your preference)

Favourite cheese Blend (we used Mozzarella, Parmesan and Cheddar)

Mayo (or Butter)

Sour Cream (Optional)

Direction:

Start by chopping up the Spinach and Artichoke. (Tip: rolling the spinach up will make chopping easier.) Add the chopped vegetables to a frying pan and grate in the two cloves of Garlic (or chop really finely). Fan fry on Medium-High heat until Spinach has wilted (or defrosted). Remove mixture from head.(At this point you can add the sour cream if you wish, to the mixture and stir once it had cooled enough, we didn't and kept it simple but some people prefer theirs with sour cream.) Butter the outside of the bread with mayo and assemble your sandwich. Add your mixture and top with your cheese blend before topping with a second slice of bread and buttering its outside also. Pan fry until cheese is melted to your liking.
