Cooking with Your Eyes - Violet / Purple

Today is our last day of the rainbow. I think that this one should be easy enough. A lot of fruits and vegetables are purple in colour and I think they would go well together. Something simple like a Purple Potato and Eggplant hash or something more exotic. But I believe there much more options with purple than with blue and it is a fun way to stick with flavour you recognize while trying different fruits and vegetables.
