Freebie Friday - Breakfast Sandwich
Today we are sharing a simple recipe for a breakfast sandwich. This is so versatile, that you can literally add almost anything to it. It is your basic breakfast sandwich and then we are going to look at additions to make it unique. So much so that you can make the base (eggs) and then have a different sandwich every day of the week if you really wanted to.
Starting with the basics. Take one egg (per sandwich), and whisk them together. This recipe is best done in bulk. So try to measure out how many sandwiches you want throughout the week. Also, keep in mind that these sandwiches will freeze very easily so you can make them in advance. A key thing to the eggs is seasoning. Add salt and pepper to the eggs, and hot sauce if you are so inclined. If not that is fine. We add feta cheese to ours, you can add any cheese you like or you can simply not add any at all. You can also add anything else you would like at this point (chopped up finely). Once everything is mixed in, pour into a casserole dish or baking dish (we usually use a square one). Bake until the eggs have cooked through.
Once the eggs are ready you simply add them to whatever bread you want. It works great as a regular old sandwich, or you can use English Muffins, Bagels, Southern Style Biscuits, anything you like. You can even break it up and put it in a wrap. Next the toppings. We simply add some mixed greens, but you can add a slice of cheese, some ketchup, any meat you like, bacon, sausage, bologna. That's what makes these things so amazing. You can go in whatever direction you want and it will still taste amazing.
