Leftover Make Over! - Mashed Potatoes

Today we are sharing one recipe on how to use up Mashed Potatoes. In Canada, Thanksgiving was yesterday and of course, there are so many leftovers, it is kind of daunting! And eating the same thing over and over again can get pretty boring. So we are going to share a creative way to remake your Mashed Potatoes. Today we are sharing one recipe that can be made a few different ways.


So we are going to make the mixture first, you want about 3 cups of Mashed Potatoes, 1 - 2 eggs (this will depend on how thick or thin your mashed potatoes were), you also may need to add breadcrumbs if the mixture doesn't bind together well. (Add seasoning if needed or desired.) This process may seem familiar, it is the same process for making meatballs. This is the basic recipe.


Should you want to eat them just like that you can add 1/2 a cup of shredded cheese to the mixture, or you can add a chunk (a small square) of cheese to the middle and form the ball around it. Similarly, you can add a cooked sausage ball (1 pound of sausage, 1 egg, 1/2 cup of breadcrumbs - fried in a frying pan), to the middle of the ball also.


Coat each ball in breadcrumbs (season if desired), and deeply try at 360 degrees until they are golden brown.


Suggested ways to serve:

Plain balls (or the ones with the shredded cheese added) can be dipped into or have sauce cream drizzled over them, and topped with green onion and/or bacon crumble.


Sausage balls can be served with gravy (you can use any leftover sausage meat you have in this also, simply cook it first). Keeping the fat from the sausage add an equal amount of flour to the pan and mix until the flour has cooked (2 to 5 minutes). Add 1/4 a cup of milk and stir completely (you may need more to help mix in all the flour, this will depend on how much fat there was). Season with salt and pepper and let thicken. Serve on a warm or tasted biscuit, English muffin, or slice of bread.
