Leftover Make Over - Turkey Pot Pie Soup

Today we are sharing one final Leftover Makeover recipe. We dealt with the Mashed Potatoes yesterday, today we are dealing with Turkey! Now Turkey Pot Pie in itself would be a great way to use up Turkey, vegetables, and if you have an extra pie shell laying around. But today we are making it even simpler! And of course, you don't have to wait until Thanksgiving time to make this recipe, you can use chicken to replace the turkey!


So like most soups we are going to start with the raw vegetables. This is where you would cut up, dice, or chop the celery, carrots, onions, garlic, things like that. If you already have the carrots cooked, you can skip them and wait to add them later. You want to avoid any raw vegetables that don't fry, right now we just want to make the base. So we fry them in butter and oil, you can choose either or that is fine also. And you want them soft, the garlic and onions fragrant and almost translucent.


Once the vegetables have softened, you can add the chicken broth. I added a whole box of broth and then flavoured it with bouillon. This will be to taste of course. You don't want it too strong, weaker is always better because you can adjust it as you go. If it is too strong, simply add more broth or water. Now is the time for any raw vegetables that don't fry. For example, we used broccoli here, but anything you want to add, cauliflower would be great, potatoes, things of that nature would go here. You want to bring the broth to a boil and let the vegetables cook. When they are almost done, you can add any frozen vegetables you have, peas, are traditional but whatever you like is fine to add. Finally, when everything is cooked, you can add your pre-cooked vegetables. So if you have the carrots already cooked or something like that you can throw that in now. Also since the turkey is already cooked you can throw it in now also. (We chunked our turkey into bite-sized pieces, if you have children you may want smaller pieces.)


Let everything heat up and while it does, open your cans of cream of chicken soup. You can add one can at a time and test it. If you prefer it thick and creamy you may want to eliminate half the broth and water and possibly add another can of soup. We used two cans of cream of chicken soup to the box of broth and about half a cup of water. And we got a nice liquid soup (which is what we were going for). Again this is up to your personal preference.



Bonus! If you do have extra pieces of pie crust, you can bake it up and top this soup with it! Kind of like crackers!
